We love this time of year. It’s not only a time to reflect and enjoy the indulgences of the season, but it’s also a time to embrace classic traditions and recipes. This recipe is a tried and true favorite shared by one of our vendors who provide delicious homemade style jams with a twist inside Farm Hippie. What you will need:
1 C butter, softened
1 Package (8 oz) cream cheese, softened
1C sugar
1-½ t vanilla extract
2-¾ C all-purpose flour
⅔ C Jake’s Jams
What you will do:
1. Cream butter, cream cheese, and sugar until light and fluffy. Beat in vanilla. Gradually beat in flour. Divide dough into four portions. Shape each disk; wrap it in plastic. Refrigerate until firm enough to roll for about 2 hours.
2. Preheat the oven to 375. On a floured surface, roll each portion of dough to ⅛-in. Thickness. Cut with a floured 2-inch round cookie cutter. Place half of the circles onto ungreased baking sheets. Place ½ teaspoon of Jake’s jams ( I used Strawberry), but use your favorite, in the center of each circle: top with remaining circles and press edges lightly with a fork to seal. Cut slits on the top of each cookie. Bake until the edges are light brown for 7-9 minutes. Remove from pans to wire racks to cool.
